You know that uncontrollable face you make when the tangy goodness of vinegar mixes with a deep seeded sublime sweetness and then a little heat leaves your lips tingling? Yep, THIS is one of those sauces. Vinegar sauces like this are the stuff that legends are made of and, are worth the whopping 5 minutes they take to make. Why the word “Mop”? Funny you should ask… Mop Sauces get their name from the simplistic implement of delivery used to spread this amazingness over a full Southern size Q fulla meaty goodness… sure you may use one on yer floor but real pros know that they are best for the barbie. PS… this would also be AMAYYYYYYYYY-ZING on Fish and Chips… just sayin’.
Makes 3 Cups
3 Cups Apple Cider Vinegar
¾ Cup Granulated Sugar
1/3 Cup Ketchup
¼ Cup Honey
¼ Cup Kosher Salt
3 Tblsp Crushed Red Pepper Flakes
1 Tsp Minced Fresh Garlic
3 Tblsp Minced Shallot
Fresh Ground Black Pepper to taste
Put all of the ingredients into a saucepan and whisk until full combined. Heat over medium to a light simmer.
Reduce heat to low and let simmer for about 20 minutes. What ever you do don’t stand over this baby while it is bubbling away.. the vinegar will getchya.
Remove from heat and let cool completely. Transfer to a container and refrigerate at least 12 hours. To serve be sure to use a dispenser that will somewhat regulate the flow- this sauce is much thinner than your average BBQ sauce and a little goes a long way.
